Foodie Focus: Rhabarber / Rhubarb

Hi!!

In den letzten Wochen hatte ich immer nur eins im Focus: Rhabarber!! Ich liebe ihn einfach, er ist so vielseitig und hat einen ganz einzigartigen Geschmack (den manche lieben, manche hassen). Daher der heutige Foodie Focus auf meine geliebten grün-rosa Stängel!!

I had just one thing in my focus during the last weeks: rhubarb! I just love it, its so versatile and has this distinctive taste (which some love, others hate). So todays foodie focus is about my beloved green-yellow stems!!

Herkunft / Origin

Rhabarber kommt ursprünglich aus China und verbreitete sich von dort aus nach Russland. Die Rhabarberwurzel wurde als Heilmittel bereits zu Christi Zeiten international gehandelt. Er ist übrigens ein Gemüse, und kein Obst, wie man aufgrund der oft süßen Zubereitung vermuten könnte.

The origins of rhubarb are in China, from where it spread first to russia. The rhubarb root was traded internationally already at the time of Christi. Its a veggie by the way, no fruit, as you might think because of the often sweet preparation.

Inhaltsstoffe und gesundheitlicher Wert / Ingredients and nutritional value

Rhabarber enthält sehr viel Vitamin C (10-19mg, ungefähr ein Drittel des Tagesbedarfs), ebenso viel Kalium (entwässernd) und Kalzium (Knochenbildend). Daneben enthält er Zitronen- und Apfelsäure, Gerbstoffe, Bitterstoffe und das darmfreundliche Pektin, einen wichtigen Ballaststoff. Da der Rhabarber wegen seiner „Antrachinone “ mild abführend wirkt, ist er gut für eine Entschlackungskur im Frühjahr geeignet. Allgemein ist der Rhabarber appetitanregend und verdauungsfördernd.

Vielleicht habt ihr auch schon mal etwas über Oxalsäure im Rhabarber gehört. Diese ist vorwiegend in den Blättern vorhanden und gilt als unbedenklich.  Erst ab Mitte Juni nimmt die Konzentration in den Stängeln zu, danach wäre es ratsam ihn zumindestens zu schälen, besser noch zu kochen (davor kann man ihn auch roh essen). Oxalsäure bindet sich mit Calcium zu Calciumoxalat und wird mit dem Stuhl ausgeschieden – wer das verlorene Calcium ausgleichen will kann z.B. ein Glas Milch zum Rhabarber trinken (wobei das auch umstritten ist, da es ja Studien gibt, das Milch dem Körper Calcium entzieht – es gibt aber auch viele Gemüsesorten die viel Calcium enthalten (teilweise mehr als Milch!), z.B. Spinat, Brokkoli, Grünkohl, oder auch Sesam).

Rhubarb contains a lot of vitamin C (10-19mg, about one-third of the daily requirement), lots of potassium (diuretic) and calcium (bone development). In addition, it contains citric and malic acid, tannins, bitter substances and the intestinal friendly pectin, a major dietary fiber. Since the rhubarbs laxative effect (because of „anthraquinone“), it is great for a spring detox. Rhubarb is generally appetizing and digestive.

Perhaps you have already heard something about oxalic acid in rhubarb. It is mainly found in the leaves and is considered safe. In mid-June the concentration in the stems increases, from then it would be advisable to at least peel it, even better cook (before this time it can also be eaten raw). Oxalic acid binds with calcium to calciumoxalat and is released with stool – if you worry about the lost calcium just drink a glass of milk with your rhubarb – although there are studies saying that milk actually extracts calcium from the body – there are also lots of veggies that provide calcium (some more than milk!) e.g. spinach, brokkoli, or even sesame)

Verwendung / Usage

Rhabarber kann man wie gesagt sehr unterschiedlich verwenden. Man kann Marmelade und Kompott machen, etwas backen (z.B. Tartelettes), aber ihn auch zu pikanten Gerichten essen (siehe mein letzter Freaky Flavor). Viele schälen ihn und essen ihn nicht roh, ich lass aber eigentlich immer die Schale dran (zumindestens bis Juni) und esse ihn auch roh als leckeres Kompott. Hatte bisher noch nie Probleme damit und nach meinen Recherchen auch keine Angst davor.

Rhubarb is very versatile, as already said. You can make jam and compote, bake with it (e.g. tartelettes), but also eat it to savory dishes (see my latest freaky flavor). Some peel it and don’t eat it raw, I always leave the peel on (at least til June) and eat it raw as yummy compote. I never had any problems with it and as I did some research I’ll keep on doing what I do.

In den meisten Supermärkten findet ihr Rhabarber beim Obst und Gemüse. Auch die meisten Bio-Läden haben ihn während der Saison im Angebot.

You can find it in most supermarkets. Most farmers markets have them too when its in season.
